Preheat oven to 350 degrees. Grease and flour your cake pans. I used 3 9-inch cake pans. Set aside.
In an electric mixer add the eggs, sugar, pumpkin, oil, cinnamon, vanilla, and combine.
Add the flour, baking powder, baking soda, salt, and mix until just combined.
Then, add the hot water at the very end and combine just until water is incorporated. DO NOT over mix.
Pour the batter into your pans and bake for 25-35 minutes, until the middle of the cake passes the toothpick test. Set cakes aside on a cooling rack. DO NOT leave in cake pans, other they'll continue to bake in the hot pans.
