Pumpkin Spice Cake

The best pumpkin spice cake you will ever have . Seriously.

  • 4 large eggs
  • 3 cups granulated sugar
  • 1 15 oz can pumpkin PUREÉ
  • 1 cup vegetable oil
  • 3 tsp cinnamon
  • 1 tbsp pumpkin pie spice
  • 1 tsp vanilla
  • 3 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 2/3 cup HOT water


  • 8 oz cream cheese, softened
  • 4 sticks butter, softened
  • 1 2lb bag confectioners' sugar
  • 1 tbsp vanilla extract
  • 1 tsp almond extract



  • Preheat oven to 350 degrees. Grease and flour your cake pans. I used 3 9-inch cake pans. Set aside.
  • In an electric mixer add the eggs, sugar, pumpkin, oil, cinnamon, vanilla, and combine.
  • Add the flour, baking powder, baking soda, salt, and mix until just combined.
  • Then, add the hot water at the very end and combine just until water is incorporated. DO NOT over mix.
  • Pour the batter into your pans and bake for 25-35 minutes, until the middle of the cake passes the toothpick test. Set cakes aside on a cooling rack. DO NOT leave in cake pans, other they'll continue to bake in the hot pans.


  • In a large bowl, add the cream cheese, butter, confectioners' sugar, and vanilla and whisk or mix with an electric mixer until smooth and fluffy.
  • Decorate cake as desired!
