Pumpkin Spice Cake
The best pumpkin spice cake you will ever have . Seriously.
Ingredients
Cake
- 4 large eggs
- 3 cups granulated sugar
- 1 15 oz can pumpkin PUREÉ
- 1 cup vegetable oil
- 3 tsp cinnamon
- 1 tbsp pumpkin pie spice
- 1 tsp vanilla
- 3 1/2 cups all-purpose flour
- 1 tsp baking powder
- 2 tsp baking soda
- 1 tsp salt
- 2/3 cup HOT water
Frosting
- 8 oz cream cheese, softened
- 4 sticks butter, softened
- 1 2lb bag confectioners' sugar
- 1 tbsp vanilla extract
- 1 tsp almond extract
Instructions
Cake
- Preheat oven to 350 degrees. Grease and flour your cake pans. I used 3 9-inch cake pans. Set aside.
- In an electric mixer add the eggs, sugar, pumpkin, oil, cinnamon, vanilla, and combine.
- Add the flour, baking powder, baking soda, salt, and mix until just combined.
- Then, add the hot water at the very end and combine just until water is incorporated. DO NOT over mix.
- Pour the batter into your pans and bake for 25-35 minutes, until the middle of the cake passes the toothpick test. Set cakes aside on a cooling rack. DO NOT leave in cake pans, other they'll continue to bake in the hot pans.
Frosting
- In a large bowl, add the cream cheese, butter, confectioners' sugar, and vanilla and whisk or mix with an electric mixer until smooth and fluffy.
- Decorate cake as desired!
